For Chicken
  • Boneless chicken breast halves ½ kg (cut into 1 inch strips)
  • Soya sauce 2 tbsp
  • Vegetable oil 2 tbsp
  • Lemon juice 2 tbsp
  • Turmeric 1 tsp
  • Coriander powder 1 tsp
  • Red chili powder 1 tsp
  • Cumin powder 1 tsp
  • Salt ½ tsp or to taste
For Peanut Butter Sauce
  • Garlic 1 clove (minced)
  • Peanut butter ¼ cup
  • Sugar 2 tbsp
  • Red chili flakes ¼ tsp
  • Soya sauce 2 tbsp
  • Water ⅔ cup
For Chicken
  1. Marinade chicken with all above ingredients and leave for 2 hours.
  2. Preheat a grill pan for medium-high heat.
  3. Thread marinated chicken onto skewers, then grill 4 to 5 minutes per side, or until cooked through. Serve with warm peanut butter sauce.
For Peanut Butter Sauce
  1. Cook garlic and peanut butter together in a saucepan over medium heat until simmering, about 4 minutes.
  2. Whisk in sugar, chili flakes, soy sauce, and water. Reduce heat and simmer, stirring occasionally, until starting to thicken, about 10 minutes.
