Chinese Rice with Pepper Steak Recipe

Chinese Rice with Capsicum/Pepper Steak

Ingredients
  • For Steak
  • Steak 1 kg
  • Peppers/capsicum 3-4 large cut into thick strips (preferably assorted colours)
  • Onions 2 medium (grated)
  • Spring onions 2-3 (chopped finely)
  • ginger/garlic paste 1 tbsp
  • Tomato paste 2-3 tbsp
  • Green chilies 2-3 (chopped)
  • Oil 2 tbsp
  • Cornflour 1 tsp ( mixed with water into a paste)
  • Soya sauce 1 tbsp
  • Salt to taste
  • For Rice
  • Long grain rice 4 cups (soaked for 15-20 minutes)
  • Oil 3 tbsp
  • Spring onions 2 tbsp (chopped)
  • Garlic paste 1 tsp
  • Ginger paste 1tsp
  • Capsicum 1 (cubed)
  • Carrots 2 (grated)
  • Sweet corn 2 tbsp
  • Salt to taste
  • Soya sauce 1 tbsp
  • Hot boiling water as required
Instructions
For Steaks
  1. Cut steak into strips, then boiled for about 15 minutes in a pressure cooker with some ginger/garlic, 2-3 cups water, salt/pepper, 1 tbsp of vinegar and a tbsp of oil. Drain and set aside. Reserve the stock.
  2. Heat the oil in a wok, add the onions and fry until soft and translucent.
  3. Add the ginger garlic and fry for a minute, then add the green chiles and the capsicum strips. Stir fry for about 3 minutes, and add the tomato paste and salt. Cook for about 2 more minutes, then add the stock.
  4. Cover and simmer until the capsicum is softened, then add the beef strips and the cornflour paste. Mix together, and let it simmer for another 5 minutes, then splash on soya sauce and turn off the stove.
For Rice
  1. Heat the oil in a deep pan. Add onions followed by ginger garlic, then the carrots. Stir fry for a while, then add the capsicum and sweet corn.
  2. Add the drained rice, and stir fry for a couple minutes, then add the hot water and salt. Let it cook on medium heat until rice is almost cooked and not much water left.
  3. Splash on some soya sauce, cover and put in oven or on dum for about 10 minutes.
