For the Dumplings
  • Ground chicken 500g
  • Salt to taste
  • Red chili powder 2 tbsp
  • Soya sauce 2 tbsp
  • Wonton Wrappers as required
  • Plain flour for dusting
  • Oil for frying
For Hot Chili Sauce
  • Soya sauce 3 tbsp
  • White vinegar 1 tbsp
  • Worcestershire Sauce ½ tsp
  • Sugar 1 tsp
  • Hot chili sauce ½ tsp
  • Minced ginger ½ tsp
  • Warm water 2 tbsp
  1. Mix all dumplings ingredients. Set aside.
  2. In a heavy bottom pan, simmer hot chili sauce ingredients for 2 minutes. Remove from heat and set aside.
  3. Place 1 tbsp filling in the center of each dumpling wrap. Moisten the edge with water, fold over to enclose the filling, and press the edge to seal. Transfer the dumplings to a tray that has been dusted with plain flour.
  4. Heat oil in a wok and fry dumplings from both sides until golden and crisp. Remove and drain on a paper towel.
  5. Serve the dumplings warm with the sauce on the side.
