Ingredients
  • For Mutton Leg Roast
  • Mutton leg 1
  • Roasted chickpeas 4 tea spoons
  • Red chili powder 2 tea spoons
  • Paprika powder 2 tea spoons
  • Whole dry coriander 2 tea spoons
  • Poppy seeds 2 tea spoons
  • Garam masala powder 1 tea spoon
  • Salt 1-1/2 tea spoons
  • Citric acid ½ tea spoon
  • Nutmeg 1
  • Mace 5
  • Yogurt 1 cup
  • Ginger garlic paste 4 tea spoons
  • Green chili paste 4 tea spoons
  • Lemon juice 6 tea spoons
  • Meat tenderizer powder or papaya paste 2 tea spoons
  • Oil 1 cup
  • Water 2 glass
  • For Rice
  • Rice ½ kg (soaked)
  • Clarified butter ½ cup
  • Garlic paste 1 tea spoon
  • Green chilies 6 (chopped)
  • Salt to taste
  • Tamarind paste 6 tea spoons
  • Sugar 2 tea spoons
  • Soya sauce 2 tea spoons
  • Chili sauce 1 tea spoon
  • Tomato paste 2 tea spoons
  • Water as required
Instructions
For Mutton Leg Roast
  1. Place the mutton leg in a dish and gently prick it with a knife from both sides.
  2. Crush nutmeg and mace with hammer.
  3. Grind roasted chickpeas, red chili powder, paprika powder, whole dry coriander, poppy seeds, garam masala powder, salt, citric acid, nutmeg and mace.
  4. In a mixing bowl mix yogurt, ginger garlic paste, green chili paste, lemon juice, meat tenderizer powder and all ground spices.
  5. Marinate mutton leg in this mixture over night.
  6. Take a large pan and heat up oil in it. Place mutton leg in oil and fry from both sides about 5-6 minutes until brown from both sides.
  7. Now pour 2 glasses water in it, cover tightly and cook over slow flame about one hour or until mutton leg tender and soft.
  8. Then put it in baking try and place in preheated oven at 200c for 10-15 minutes.
For Hot & Sour Rice
  1. Sauté garlic paste and chopped green chilies in clarified butter.
  2. Then add all other ingredients and water. Add rice and cook until water dries and 3/4 rice done.
  3. Simmer over low flame for 8 minutes.
  4. Dish out hot & sour rice, place mutton leg roast over rice and serve.
