Chinese Chicken Fried Rice

Chicken Fried Rice is a wonderful and tasty combination of vegetables, chicken and egg. This Chinese Rice Recipe has a different taste because I boiled rice in chicken stock rather to boil in plain water. Boiling in chicken stock gives rice a scrumptious taste. Must try one of best recipe of Chicken Fried Rice and serve it with Chicken Shashlik.

  • Boneless chicken ½ kg (cubed)
  • Rice 2 cups (soaked)
  • Salt to taste (divided)
  • Black pepper powder 1 teaspoon (divided)
  • Soya sauce 4 tea spoons
  • Capsicums 2 medium (cubed)
  • Carrots 2 medium (cubed)
  • Eggs 3
  • Clarified butter as required (divided)
  • Yellow food color ¼ tea spoon (mix in water)
  • Water as required
  1. Take 6 glass water in a pan; add 1 tea spoon salt and chicken. Cook chicken until tender.
  2. Remove chicken from stock and reserve stock.
  3. Season chicken with ½ tea spoon black pepper powder and soya sauce. Set aside.
  4. Whisk eggs in a bowl with pinch of yellow food color, ⅛ tea spoon salt and1/8 tea spoon black pepper. Make scrambled eggs.
  5. Heat up stock in a pan, (add water in stock if required) add rice to boil them. When rice has done, drain water and set aside rice.
  6. In large skillet heat ¼ cup clarified butter, sauté vegetables until soft then shift chicken pieces and eggs followed by rice. Add ⅛ tea spoon black pepper and toss carefully. Season with salt if required.
  7. Drop yellow food color and simmer rice for 8-10 minutes.
  8. Chicken fried rice is ready to serve with chicken shashlik.
